How to make Chaas ?

  • Chaas is made by churning yogurt (curds/dahi) and cold water together in a pot, using a hand-held instrument called madhani (whipper). 
  • Although chaas can be made from fresh yogurt (curds/dahi), it is more commonly made at home from yogurt that is a few days old and has become sour due to age.


Benefits of Chaas :

  • Since it is made from watered-down curd, this drink soothes the stomach. The buttermilk tends to wash down the spices from the stomach lining and calms your stomach. Addition of condiments like jeera and curry leaves help the stomach to relax.
  • Buttermilk can help you feel comfortable after a particularly heavy meal. The curd in buttermilk, along with the added spices, strengthens digestion and brings almost instant relief.
  • Buttermilk has water and curd with plenty of electrolytes. This makes it particularly effective against dehydration. Whether in summer or winter, a cool glass of buttermilk can bring relief from dehydration.
  • People who are lactose intolerant are deprived of natural calcium present in milk. Buttermilk can be used as a substitute for milk. It gives you calcium without the fat present in milk.
  • Buttermilk is a wonderful source of vitamin B complex, proteins and potassium. Vitamin B is known to be essential for the conversion of food into energy, secretion of hormones and digestion.

Ingredient :

Main Ingredient :
  • Curd : 1 cup
  • Cumin powder : 1 tsp
  • Mint leaves (chopped) : 1 tbsp
  • Ginger (chopped) : 1 tsp
  • Black salt : ¼ tsp
  • Salt to taste
  • Water : 2 cup
For Tempering :
  • Curry leaves : 7-8
  • Cumin Seeds : ½ tsp
  • Green chili : 1-2 pcs
  • Ghee (butter) : 1 tsp
For Smoke :
  • coal : 1 pcs
  • Aluminium foil for cover
For garnishing :
  • Ice Cube : 2-3
  • Coriander leaves 
  • Mint Leaves

Method : 

  • First of all add one cup of curd and two cup of water along with it and blend until both become one with eachother.
  • Now add mint leaves, chopped ginger, cumin powder, some coriander leaves and black salt and blend it again. You can add some salt as per taste.
  • Place hot coal in a small steel bowl and place it into a large bowl. Pour the buttermilk mixture into the large bowl. Place curry leaves, green chillies and cumin seeds over the coal and pour ghee (butter) over them. Cover the large bowl with an aluminium foil and keep for 5 minutes.
  • Remove the foil, pour the chaas into serving glasses with ice cube, and serve garnished with coriander leaves and mint leaves.



Tips :

  • Preferably use chilled water for the preparation or chill it before serving during summers.
  • Cooking time may vary if you do not have the mint powder or roasted jeera powder handy.
