Aloo Gobhi

- Baby potatoes : 250 gm
 - Cauliflower : 250 gm
 - Onions (chopped) : 2 medium
 - Tomatoes (chopped) : 2 medium
 - Oil : 2 tbsp
 - Ginger-Garlic paste : 1 tsp
 - Cumin seeds : ½ tsp
 - Coriander powder : ½ tsp
 - Turmeric powder : ¼ tsp
 - Red chili powder : ¼ tsp
 - Green chilies (chopped) : 2 medium
 - Garam masala : ¼ tsp
 - Coriander leaves (chopped) : 1 tbsp
 - Salt to taste
 - Water (As needed)
 - Kasoori methi : 1 tsp
 
Method :
- First of all, Heat oil in a pan and put cumin seeds to it. Let the seeds sizzle for few second.
 
- Add ginger-garlic paste and chopped green chili and saute it for a minutes.
 
- Then add chopped onions and cook for 2-3 minutes until onions are soft and golden brown in colour.
 
- Add chopped tomatoes, stir and mix well.
 
- Add turmeric powder, red chili powder, garam masala, coriander powder and salt to taste. Cook the spices for 30 seconds.
 
- Add potatoes and half cup of water. Cover the pan and cook for around 5 minutes. You may stir them once in a between.
 
- Place the cauliflower on top and sprinkle coriander leaves. Do not stir.
 
- Add water and simmer it for 5 minutes again and cover the pan.
 
- Next add kasoori methi (crush it between your hand palms) and mix well.
 
- Aloo gobi is ready. Garnish with coriander leaves.
 
- Serve Aloo gobi hot with rumali roti.
 
Tips :
- Chop everything before you start. Remember to chop the potatoes and cauliflower in large pieces (1 inch).
 
- You don't need a lot of water for this Aloo gobi recipe.
