Palak Paneer

Ingredient :
For Spinach Paste :
- Spinach (Palak) : 2 bunch
- Tomatoes (chopped) : ¼ cup
- Garlic-Green chili paste : 2 tsp
- Onions (Chopped) : ½ cup
- Dried red chilies : 2-3
- Ghee : 3 tbsp
- Cumin seeds : 1 tsp
- Bay leaf : 1
- Turmeric powder : 1 tsp
- Garam masala : 1 tsp
- Kasuri methi : 2 tsp
- Salt to taste
- Water : 1 cup
- Paneer : 300 gm
- Fresh cream : 2 tbsp
Method :
- First of all, Boil water and add a some of salt and spinach. Boil it.
- Next, take out and transfer this in chilled water. Keep aside for 10-15 minutes.This helps the leaves in retaining their green color.
- Now, grind spinach leaves to a fine puree. Puree to a smooth paste and set aside.
- Heat ghee in a pan and add cumin seeds, dried red chilies, Bay leaves, Garlic-Green chili paste, chopped onions and suite until golden brown.
- Then add turmeric powder, tomatoes, garam masala and stir fry on high flame for 2-3 minutes.
- Add in the prepared spinach puree and mix. Also add around half cup of water.
- Cover the pan and let it cook for 10 minutes on medium heat.
- Then add fresh cream.
- Add paneer to the greavy and stir well. Let the simmer for 3-4 minutes.
- Switch of the flame, add Kasuri methi (crush it between your hand palms) and mix well.
- Palak paneer is ready. Garnish with fresh cream.
- Serve palak paneer hot with roti or naan.
Tips :
- if the spinach is bitter, you can add half tsp of sugar. That is totally optional.
- You can add green chilies if you like spicy.
- You can fry the paneer cubes before adding them to the curry.
