Ingredients :
Main Ingredients :
- Carrot (grated) : 4 cup / 1 kg
- Milk (full cream) : 4 cup / 700-800 ml
- Sugar : 1 cup
- Ghee : 2 tbsp
- Cardamom powder : ¼ tsp
- Khoya (crumbled) : 200-250 gm
- Cashews (chopped) : 10-12 pcs
- Almond (roasted chopped) : 10-12 pcs
- Golden raisins : 15-20 pcs
For garnishing :
- All Chopped Dry Fruit
Method :
- Wash, peel and grate the carrot.
- Heat up ghee in a kadai. Add all chopped dry fruits and roast it for one minutes.
- Now add grated carrot in to kadai. Carrot needs to be cooked only for 2 to 3 minutes until they turn soft.
- Add milk and cook on slow flame till all the milk is evaporated. (try to use full cream milk instead of light milk).
- Cook carrot and milk for 30 minutes on low flame.
- Now add khoya, sugar and cardamom powder and mix well.
- When everything is mixed well together, cover and the halwa on medium heat for about 10 minutes.
- After 10 minutes, open and mix well again. Now switch of the flame.
- Your Carrot Halwa is ready. Garnish it with dry fruits.
Tips :
- You can serve warm or child with vanilla Ice-cream as your dinner dessert.
- the halwa stays good in the fridge for almost about a week.
- Add cardamom powder with sugar to give the extra fragrance to carrot halwa.
