Chhole Chana (Punjabi Style)

Timing :

  • Total Time: 40-45 minutes

Ingredients :

  • chhole chana (chickpeas) - 375 g
  • Water - 1 liter
  • Tomato - 1 pcs
  • Onions (small) - 3 pcs
  • Coriander leaves - 1½ tsp
  • Vegetable oil - 2 tbsp
  • Cumin seeds - 1 tsp
  • Ginger paste - 1 tsp
  • Garlic paste - 1 tsp
  • Bay leaves - 2 pcs
  • Suger - 1 tsp
  • chilli powder - 1 tsp
  • Turmeric - ½ tsp
  • Ghee - 1 tbsp
  • Green Chillies - 4 pcs
  • Cinnamon - ½ tsp
  • Cloves - ½ tsp
  • Lemon juice - 2 tsp



Method :

  • Mix the chhole chana with half the water and the salt. Cook this mixture in a pan on a medium heat for 30 minutes.
  • Grind 2 tbsp of the Chhole chana with half of the tomato, one onion and half the coriander leaves to a fine paste, Set aside.
  • Heat the oil in a large pen. Add the cumin seeds. Let them splutter for 15 seconds.
  • Add the remaining onions, the ginger paste and the garlic paste, Fry this mixture on a medium heat till the onions are brown.
  • Add the remaining tomato along with the bay leaves, suger, chilli powder, turmeric and the Chhole-tomato paste. Fry this mixture on a medium heat for 2-3 minutes.
  • Add the remaining Chhole chana with the remaining water. Simmer for 8-10 minutes, Set aside.
  • Heat the ghee in a small pan, Add th green chillies, cinnamon and clove, Let them splutter for 30 seconds, Pour this mixture over the Chhole chana, Mix well. 
  • sprinkle the lemon juice.
  • The remaining coriander leaves on the top of the Chhole, Serve hot.

 


  • Serve hot with Bhature, paratha, roti along with chopped cucumber, onion and lemon wedges.


TIPS :
  • I have used a tea bag to give a nice brown colour to chhole.
  • If you don't have all this spices, you can use 2-3 tbsp of store bought chana masala or chhole masala instead of all these spices for mixing in the fried onion tomato-mix.
  • Usually vegetable taste best when they are made fresh but exceptionally chhole taste more delicious after a couple of hours of cooking when they absorb the spices.
