Sweet Mango Pickle

Ingredients :
  • 500g unripe mangoes, peeled and finely sliced
  • salt to taste
  • Turmeric - 1 tsp
  • Vegetable oil - 120ml
  • cloves - 2 pcs
  • Cinnamon - 2.5cm/1 pcs
  • Black peppercorns - 6 pcs
  • Chilli powder - 1 tsp
  • Grated jaggery (suger) - 250g
  • Ginger - 5cm/2
  • Garlic cloves (finely sliced) - 12 pcs

Method :

  1.  Rub the mango slices with the salt and turmeric. Set aside for an hour.
  2. Squeeze out water by pressing the mango slice between your palms. Set aside.
  3. Heat the oil in a pan. Add the cloves, cinnamon and peppercorns.
  4. Let them splutter for 15 seconds. Add the mango slices and mix well.
  5. Add the chilli powder, jaggery, ginger and garlic. Mix well and cook over a low heat till the jaggery melt into a thick syrup.
  6. Allow the pickle to cool. Store in a dry, clean jar and keep aside for a day.


NOTE :   This can be stored in the refrigerator for a month.
