Peri Peri French Fries

Ingredient :

  • French Fries (frozen) : 3 cup
  • Oil for deep-frying 

For Peri Peri Masala 
  • Kashmiri red chilies : 3
  • Byadgi red chilies : 3
  • Cumin seeds : 1 tsp
  • Coriander seeds : 1 tsp
  • Black pepper corn : 1 tsp
  • Oregano : 1 tsp
  • Bay leaf : 1
  • Lemon zest
  • Basil leaves (dehydrated)
  • Garlic cloves (dehydrated)
  • Onions (dehydrated)
  • Salt to taste

Method :

  • First of all, In a pan, toast kashmiri and byadgi red chilies on medium to low flame for 2-3 minutes.
  • Add coriander leaves, black peppercorn and again roast them.
  • Turn of the flame and keep aside for cool down.
  • Heat sufficient oil in a kadhai. Deep-fry french fries till crisp. Drain on absorbent paper.
  • In a mixer jar add roasted spices, basil leaves, garlic, onions, oregano, bay leaf, lemon zest, salt to taste and grind into a fine powder.
  • Sprinkle sufficient amount of peri peri mix on the fries and toss.
  • Peri peri french fries is ready.



Tips :

  • After boiling the potatoes, put them in an airtight bag and put them in the fridge for 2-3 hours.
  • Dehydrate - to lose water or to cause water to be lost from something.
