Peri Peri French Fries

Ingredient :
- French Fries (frozen) : 3 cup
 - Oil for deep-frying
 
For Peri Peri Masala 
- Kashmiri red chilies : 3
 - Byadgi red chilies : 3
 - Cumin seeds : 1 tsp
 - Coriander seeds : 1 tsp
 - Black pepper corn : 1 tsp
 - Oregano : 1 tsp
 - Bay leaf : 1
 - Lemon zest
 - Basil leaves (dehydrated)
 - Garlic cloves (dehydrated)
 - Onions (dehydrated)
 - Salt to taste
 
Method :
- First of all, In a pan, toast kashmiri and byadgi red chilies on medium to low flame for 2-3 minutes.
 
- Add coriander leaves, black peppercorn and again roast them.
 
- Turn of the flame and keep aside for cool down.
 
- Heat sufficient oil in a kadhai. Deep-fry french fries till crisp. Drain on absorbent paper.
 
- In a mixer jar add roasted spices, basil leaves, garlic, onions, oregano, bay leaf, lemon zest, salt to taste and grind into a fine powder.
 
- Sprinkle sufficient amount of peri peri mix on the fries and toss.
 
- Peri peri french fries is ready.
 
Tips :
- After boiling the potatoes, put them in an airtight bag and put them in the fridge for 2-3 hours.
 
- Dehydrate - to lose water or to cause water to be lost from something.
